Field corn is starchy; super-sweet fruit corn is not. Pearl White carries a high water-soluble sugar content (up to 34.95%) and low crude starch, so the flavour reads as clean and sweet rather than heavy. That balance is what lets it work as a fresh, raw-eaten snack as well as a cooked ingredient.
